Trouble adding to existing forms
I am trying to add a new field ti existing infopath form... it works out well for new forms.. but that field remains grayed out (unable to edit/select the field) in all the existing forms....
Is a way I could some new fields to the form which would also be available for existing forms..(the forms which already have been created)
Infopath forms stored in a library are essentially XML files. If the XML file doesn't contain the XML for a field it won't be displayed.

Perhaps you can answer one more question for me? What should I do to the infopath form where the text fields can be copied from the email that the form is submitted to. When I receive the form in an email I try to copy the form to another location but it misses the text fields so the data within them are not copied?

Copying and pasting manually from an email doesn't seem like the best idea. You can't copy the data because it is not free text.
You can easily use workflow to create a new item in a SharePoint calendar based on the form without manually intervention. It does depend on what these other apps are and why you would choose to deal with the text in an email instead of from the form itself.
